Twilight is as Ashkenazi as it gets. You may have seen stereotypes of her S1 character in other shows. Her deadpan, intellectual, and cynical personality is so incredibly on the nose (pun intended) as a Jewish stereotype. Getting on a soapbox was peak Jewish behavior. So, too, are the various neuroses she has. Her need to impress Celestia, a maternal figure, and contacting her every day is typical Jewish behavior due to their culture's intense matriarchal pressure. She's specifically Ashkenazi because she comes from a family of privilege and wealth, and is specifically set aside for greatness. She had a destiny planned out for her by the in-universe equivalent of God, unlike anyone else in her friend group.

Skin color is kind of an issue since the people who draw Twilight as poop colored also tend to think that's the only skin color she's allowed to have. The more you give in to their delusions, the more they start acting like they are in the right and harass other artists who don't draw the her as the skin color they want to. It didn't help that those retards also started posting some of "official art" where Twilight's skin was more dark looking and now act like it's canon and that's the way you should draw her as.

We all saw how "Trixie is a troon" shit also started spreading just because a certain troon musician started spreading dumb shit like how "she was originally envisioned to be a stallion" and something about her eyes having "troon colors", so she must be a troon. More seriously, FiM cribs a lot of it's situational comedy from stuff like Seinfeld. Many episodes are something like "characters X and Y are being a stubborn assholes about something that could be easily resolved if both parties put forth good faith and talked about it" only because it's a show about friendship they actually talk about it and resolve the issue. This is just speculation on my part but I doubt it's a coincidence that the character with the most screentime is one that fits into that comedy paradigm the best.
