One of the only veggies I always have in the fridge. Good for snacking, plain roasted as a side, and as an ingredient.

One of my favorite lazy meals is some potatoes baked in the microwave with shredded carrots, with sour cream and butter.I went to a Mediterranean restaurant in Chicago and they had delicious carrots.They were roasted carrots of three different colors (orange, purple, and white, each slightly different taste), served on top of a labneh (strained yogurt) sauce with honey and sesame seeds. I ate it with pita and steak kebabs and it was delightful.
The orange carrots are the sweetest.Raw purple carrots taste like carrot too, but with kind of a "peppery" sensation like you might get in a purple cabbage or a very mild radish. Yellow carrots are just skinny turnips.
