once all the crystals are dissolved the cream goes

    >>22269158
Euhhh that's how i've learnt it. The exact scientific reason i can't tell but for me it's easier to not burn it, and if you don't use a spoon to stirr it it helps going little by little. Like if you add all at once, the bottom will caramelize but the top won't and once the top caramelizes the bottom is burnt.
You can try it with 100g sugar, once all at once, and the second time in like three or four times.

    >>22269165
    open minded, great choice

    >>22269167
uh ohhh you have to be gentle

    >>22269169

    >The exact scientific reason i can't tell but for me it's easier to not burn it
Fair, I usually dump all at once and keep the heat at the lowest.
I think the "real" way is to add some water and wait for it to boil away, which allows to get a more precise control on the caramel color

    >>22269208
there are no recipe fails, just dishes that might need a new name

    >>22269209
dry caramel and water caramel are not used for the same things. both have their uses, there is no real or wrong way. you get more precise control with water caramel and you can get lighter coloured caramel and also with glucose syrup you can easily make 5kg, fuck off take a shit and come back and it won't be burnt, whilst the dry caramel if you have to make 5kg it's going to be a massive pain in the butt.
but with dry caramel you're sure there is no recrystallization and for small quantities it's faster, at least for me with induction.

get a good filling recipe, it's the keystone of macarons

    >>22269309
absolutely, although it's best to wait until tomorrow as they're not great freshly made.
you need a night in the fridge for the filling to moisten the shell and bring the flavours together.
