some years before COVID when i was still dating and socializing me and my current hole went to cheesecake factory with another couple i knew. the girls wanted to go, i know. anyway i ordered a bacon burger with mushrooms or some shit. when the food came they brought me the burger they make with the fried mac & cheese bite on top. definitely not what i ordered. i let the waitress know politely and she took it back. ten minutes later, she brought out the same fucking plate and put it in front of me. to clarify, they didnt make a second burger and fuck up a second time. she took the original mac & cheese burger back to the kitchen, put the plate back on the warmer, then brought it out and tried to trick me. by the time i was finished expressing myself, we got free desserts and free cocktails. i did not tip and left a 1 star review after

My manager orders us to use expired chicken, the fucker gets them from a supermarket very cheaply and we have to wash that shit and spice it up heavily to mask the smell.

I will never eat chicken cooked outside of my home now.

I worked as a dishwasher and prep guy at a seafood restaurant during summer of high school.
One Monday I go to work and notice one of the waitresses wasn't there, asked if she was sick or something.
During the weekend she went to get something out of a portable steam cooker and it fell over onto her, scalding her face and hands.
She was a good person and never saw her again, I felt so bad that happened to her.

its been apparent for a while that the mass influx of these shitter super spicy fried HOT CHICKEN places on every corner are a result of food quality waning, and doing exactly what you speak of
there's just no other reason to cover a piece of chicken with a quarter inch of extreme spice and pretend it's desirable
will admit those fuckers still got me hooked for a brief time, because the combination of nuclear fucked up chicken with a perfectly balanced sweet kale slaw was really nice. but not worth the gut explosion from how fucked that chicken and rancid oil in the fryer is

To be fair, the super spicy seasoning was originally intended to make people thirst so they would drink more beer, and at that it is super effective.

But yeah, once the greedy bastard found a supermarket willing to cut that cheap deal for expired chicken, he went all in on it for the sake of profit.

When I was 16 I worked at a fast food stand in a water park. Just serving burgers, fries hotdogs etc to fat sun burnt northern British cunts.

One shift i guess I was super hungover, someone ordered a cheese burger and fries, I prep and serve it. Give him the bag.

A minute or so later this guy comes back to the serving window and shouts at me ‘IS THIS A FACKIN JOKE M8?’

He then proceeds to pull the hamburger out the bag, he lifts the top bun to reveal just salad and cheese. I had forgotten to put the beef patty in the burger. Just cheese, lettuce and wrapped it up.
    Have never felt more retarded.

there's this 100+ years old market in my country, most of it it's underground like in a cave, place looks ancient and dark but there's loads of places selling food, ingredients and general goods. I wanted to try eating there at least once and went to a small place near the deepest part, asked for a famous meat soup from the region, it was disgusting, like eating old cold oil, the meat had a chemical flavor that sticks to the back of your throat and noticed cockroaches just walking around the "kitchen". remember the ratburger scene from demolition man? the whole place looks exactly like that but less clean, the shits I had that day were legendary.
    >>
    >>22263965
it's so funny how there are so many stories of this in the modern day when we have refrigeration and everything, but every time you say that historically spices were used to mask off smells in meat, you get a legion of redditors crawling out of the work insisting that that's a racist myth and nobody ever did that.
    >>
    >>22264388
A sous chef at one of my first jobs butchered his hand on a mandolin with no guard. I saw it, and even said something before it happened because I've seen it happen before. He took about a thick deli slice of meat of the bottom of his palm.

After going to the hospital and not working for like a week, the owner fired him over a sexual harassment complaint that was made over 6 months before that, by an employee that was no longer there.

This guys "friend" of 20+ years, that was the owner, literally found an excuse to fire him to not pay workers comp.
    >>
    >>22264884
Yeah but thats usually also coupled with the claim that "real food doesnt NEED spices" so that anon can feel secure in the fact they eat nothing but unseasoned chicken nuggets and steamed broccoli.

    >there's this 100+ years old market in my country
    >most of it it's underground
    Where the fuck you live
    >>
    >>22264884
Yeah, that is retarded. There is a direct historical correlation of the quality of meat and the amount of spices used.

If you are using quality meat, you do not need nearly as much spice to make it taste great.

If you use shit quality meat, you NEED a heavy load of spices to mask the smell and taste, not to mention attempt to keep it from rotting.

That is why in places in which you do not have proper refrigeration like africa the food has such a heavy load of spices.

I'm not a redditor or anything like that but the 'spice to cover bad meat' IS just a myth.
Many countries that use spices in their food is simply because those spices are abundant there, so they use them.

    >>22263965
    >My manager orders us to use expired chicken, the fucker gets them from a supermarket
I doubt this happened, unless it was via the back-door, cash in hand.

Your brain is so mushy you can’t even conceive that there was a time, not to long ago, where NO ONE had refrigeration. Outside of places that are just cold as fuck year round of course. Your ‘logical premise’ only works in the snapshot of the modern day, lmao.

    >why would there be so much spoiled food that cuisine has to evolve in such a way to cover it up?
Because it doesn't happen. people can tell if the produce is bad, spices or not - learn to deal with it.
    >>
    >>22265000
Wealth people liked to cover meat in spices to show off they could afford expensive spices in the past. Some people used spices on strong tasting wild game.

To say spices are only used on poor quality meat just makes you seem like any of the other people with a bias who want it to seem bad for whatever reason. Spices don't really cover up the taste of rotten meat and it won't prevent you from getting sick.

I dunno why it's so unbelievable to think people just like spices. Before agriculture people would gather a wide variety of plants that they thought tasted good and had health benefits. I'm sure you use garlic and mustard and black pepper all of which are potent flavorings but you'd find reasons to say these are okay.
    >>
    >>22265017
Sure whatever, you might be right, he might of been from like Essex, but this story took place in Devon, so anywhere past Exeter was basically up north to me
    >>
    >>22265060
There were other methods such as root cellars, pot-in-pot evaporation freezers, methods to store ice for long periods. You are a fucking smoothbrained faggot if you think spices were not used to preserve meat and make old meat palatable.

    >>22265062
It does not mask it completely, but it masks it enough to make it passable, specially when you fry it with batter and add sauces on top.

    >>22265081
Mate, have you never seen an african wetmarket? They literally leave the meat exposed to the elements, to the point the vendor needs to scrape off the crust made out of dead flies and insects when selling.>>22265101
    >To say spices are only used on poor quality meat just makes you seem like any of the other people with a bias who want it to seem bad for whatever reason. Spices don't really cover up the taste of rotten meat and it won't prevent you from getting sick.
That is not what I said, you fucking faggot. I said that cuisines that had bad quality meat used a larger amount of spices than cuisines that had better quality meat.

You are a faggot that is so desperate to "win" an internet argument that you are going full retard and moving the goal post.
    >>
    >>22265180
you can literally taste when meat has started slightly spoiling, i say this as someone who's gambled with off smelling chicken beef and pork many times and tasted the difference after covering them in my typical spice mixes. i straight up dont believe you guys consistently feed spoiled/spoiling meat. the only way i could see that flying is if eating off meat is the norm in your life. is your restaurant in the poorest african jungle village on the continent?
    >>
    >>22264885
Years ago I saw a cold side girl cut two of her fingertips off halfway through the nail on a mandolin with no guard that the KM had bought and kept in the store secretely against corporate policy because apparently we were taking too long to cut onions. She never got comped because she had weed in her system. God I hated that KM. Fuck you Jeremy.
    >>
    >>22264884
It's not a racist myth but it is a myth. Rich people aren't wasting expensive spices on rotten meat and people poor enough to have to eat rotten meat can't afford spices.
    >>
    >>22264845
    >You ordered a cheeseburger. Sounds like you wanted a hamburger with cheese. Don't feel bad, people make that mistake all the time.

I was inside Dominos the other day waiting for my order and the zoomer that was making the pizza was talking about how a co-worker cut himself and was bleeding all over the line the other day. I wanted to throw up. I still ate that slop.
    >>
    >>22265062
    >Spices don't cover the taste of bad meat, never has, never will do.
lol i've personally pulled out some chicken thighs out of the fridge, intending to roast them, found out they had a slightly unpleasant smell, so instead i opted for grinding them up, seasoning the hell out of them and shaping them into patties, then breading and frying them, and the smell was undetectable
why do you want to die on this hill so much. people are going to do this shit and have been doing it for ages. my mom has said she's done it, my grandma has said she's done it, and she also said older relatives have done it. obviously nobody's talking about eating rotten meat but there's a point where it's on the cusp of going bad and the complete freshness is gone where people are going to attempt to salvage it.
    >>
    >>22265176

What about merchants and tavern owners (since anon was working at a restaurant)? Think they wouldn't do it? In Victorian England bakers would put sawdust and chalk in the bread, think that's the only time in history food peddlers would mess with the food for profit/preventing loss?
    >expensive spices
And who says the spices put to that purpose would be expensive? Spices' cost varied betwen regions and points in time. Those spices weren't as expensive in areas they were native to and regular people could afford them. You're also focusing on the word "spice" and picturing exotic shit like mace and nutmeg and saffron and ignoring cheaper spices and aromatic herbs. Stuff like paprika is just dried and crushed peppers which would be pretty easy to get for regular people once they made it to Europe. Many aromatic herbs are practically weeds so commoners could use those. I literally cannot process the amount of basil, tarragon, rosemary, parsley, dill and thyme that sprouts everywhere in the garden with zero care or input from me.

I don't understand how so many people vehemently reject this extremely basic and obvious premise. It's got to be some handwringing over racist implications or some gay shit like that. Even though it's practically certain that Europeans would do it too, just by using different spices and herbs than pajeets.
    >>
Why do people reject the most obvious notion that ‘people spiced things because it tasted good’?
    >>
    >>22267251
    >I literally cannot process the amount of basil, tarragon, rosemary, parsley, dill and thyme that sprouts everywhere in the garden with zero care or input from me.
I literally have to keep mint in a separate pot otherwise it takes over the whole garden.
    >>
    >>22267271
    nobody's ever done that thougheversneedit
when people are talking about using spice to mask off flavors, that's talking about a secondary purpose, not the primary purpose.

Worked at a BJ's over a decade ago.
it made me give up entirely on casual dining as a whole since I was on both sides.

    >be 18
    >get a job as cold prep morning shift
    >day 1, dishpit quits- all three niggas
    >get told to cover it, not my job but sure, we're fucked otherwise
    >boss promises me he'll hire new dishworkers tomorrow :^)
    >this goes on for two weeks, a new druggie everyday
    >one dude didn't make it two hours before having to shoot up heroin
    >all the while the beaners on the line are openly smoking weed and not cleaning their hands at all
    >stuck in the dishpit by myself dealing with waitstaff being niggers and throwing all their plates into the bucket and getting me splashed with water
    >finally a good guy shows up and takes my place in the dishpit
    >work for one week as cold prep
    >night shift doesn't even prep for us, got to set up everything myself
    >hope by being good and taking care of some of their prep, they might do the same for me
    >lol no get fucked
    >keep having to organize the walk-in because the beaners just grab whatever they need and put it back on the first shelf they see
    >dish guy quits mid shift after a week
    >boss tells me I have to cover it again
    >work until my next paycheck and then quit

I've worked a handful of other restaurants and that was the worst experience i had.
I took my friends there a couple times for dinner because of my employee discount but we all agreed to stop going after the 3rd time because the food always took over 30 minutes to arrive and was often under or overcooked.
that spot failed their health inspection a year later and got shut down lmao.

This is why no one should ever try to make amends with already pissed customers. They'll take your apologies and treats just to shove it up your ass. In either case you'd get a 1 star review but save the cost and time trying to change it.

I imagine it would require firing the waitress and fully refund the entire meal and dessert + drinks to make you bother give anything above 1 star.
