Syrian lentil soup.

Indians have perfected lentil dishes and I'm not afraid to say it. You can't go wrong with an Indian lentil dish over basmati rice. They're not difficult to make yourself.

Ngl. Just throw them in the trash. Beans over lentils.

lentil curries are excellent. French style green lentils are also good.

Fried or baked lentil fritters (Dal Vada) are very tasty. They are similar to falafel, you can use them in wraps or sandwiches.
I usually just dip them in ketchup or chilli sauce.
Deep fried Vada are probably not the healthiest snack but they taste great

Use them in koshari

Lots of stuff you can make with lentils so I'm not gonna claim that this is the tastiest, but recently I've been getting into making baked lentil falafels and eat em with pita, veggie/salad, and tahini sauce and yogurt sauce. Stupidly stupidly easy to make the falafels if you got a food processor and oven. Most obvious greens can be used to make the falafel, so they're super versatile. I've been using cheap store brown lentils, but I bet many others will work too. The only oil needed is a brushed layer on the outside to give nice crunchy browning and to make the pan or foil [more] nonstick, and it takes like 15min or less to bake so it def isn't unhealthy and a great alternative to deep frying. I use two round spoons to scoop and shape a chubby disk while keeping hands clean.

Make like a cup or a half of any sauces in containers you can put in the fridge. A week's worth of veggie/salad in a diff container. Then when I want, I put some falafels in the toaster oven, heat up store pita, and I got a nice sandwich in 5 minutes.

Request/Bribe/Coerce your neighbour to keep them in your stead. Additionally, you may offer him some part of the produce, too.

2:1 Rice:Red lentils. Boil with water, salt and broth for 13 minutes.

You can add whatever the fuck you feel like to it. Virtually any vegetable, meat, sauce, spice will work with this.
Thats how i do it.

Oh and i forgot: a big heaping dollop of butter has to be stirred into it. Makes everything nice and creamy.

Khichuri. Not the disgusting, soupy abomination they make in India. Authentic Dhakaiya Khichuri. Takes about thirty minutes to make. Pairs really well with curries, beef/chicken or even fish.

When i make chili with beans i use lentils for half of the beans while the other half is Pinto beans. It works really well to give depth to the dish.

basically this. i do this with black lentils. but i just do lentils alone. wash them. bring water to boil. 1:3 ratio, lentil to water.
add about 2 tsp sea salt. bay leaves, garlic, onions. toss in and boil down about 1/3rd
add any diced veggies you like. when im lazy i toss the Costco frozen veggie mix in there.
let it boil down further until the lentils are still moist but no water sits above them. just kinda bubbling up from beneath. then toss in a nice dollop of ghee. stir the shit in and let sit off the heat. tasty af with anything.
grilled meats or oven roasted.
