I never understood his vendetta against frozen food. Is it just a pretentious chef thing?

I'm not buying fresh ingredients only for them to make my fridge smell like a can of farts when inevitably goes rotten.

The hypocrite has a whole line of frozen overpriced bullshit TV dinners.
>>

freezing food reduces its quality but for many things it's unnoticable especially if it's kept in stable, cold conditions. Things sitting in a walk-in freezer will remain frozen for a very long time and may suffer from freeze/thaw cycles. It's a mentality of sunk cost and not paying $200 for imported frozen vegetables when you can get fresh for $20. That sentiment is a thing of the past, however.

what a badass mofo he dont give a stuff
>>
>>22259764
Generally, restaurants are expected to have higher quality food that you can't already get at home. People are willing to pay a premium for this higher quality.

he used to be a legit chef. now he says/does whatever will garner the biggest reaction. it simply makes more money. good on him for supporting his family i guess
>>
>>22259764
His advice is for restaurants that are supposed to be turning product regularly, not some random home cook
>>
>>22259787
freezing food is notoriously one of the best ways to preserve food without affecting the quality
>>
>>22260137
That's flash freezing retard, besides the real problem is freezer burn from restaurants that keep their food for literally years
>>
>>22260152
>restaurants that keep their food for literally years
no, FIFO
>>
>>22260318
The problem is that this system doesn't work if noone is buying from the restaurant, see any GR show where a restaurant stops getting customers so they stop buying new produce and has years old meat sitting in the freezer.

Try cooking with them instead of leaving them to rot in the fridge, retard.

99% of the time it was because the owners put "fresh food" on the menu, or claimed fresh when he asked. Don't lie to the customers.

He's against people claiming it's fresh when it's frozen, dipshits

The fucker ran a sweatshop-tier industrial kitchen, where people worked in abysmal conditions for minimum wage.
No better or worse than IKEA, Jamie Oliver, or MacDonalds.
No better or worse than the failing restaurants he mocked and insulted week in, week out in Kitchen Nightmares.
Precooked, frozen, and reheated pork braises, roasted duck, sauces and fishcakes 586% more expensive.
The guy is a scammer, a cheap fraud and an obsessive liar with one (1) good cook book. His first one.

food doesn't freezer burn if it's vacuum sealed. freezer burn occurs because water sublimates out of the food into the surrounding air pockets.
>>
He's not 100% against frozen food for home cooking. Just for restaurants, who should aim for higher quality than the average home cook.
Here is a video of Gordon Ramsay cooking with frozen peas, for example:

https://youtube.com/watch?v=yDlDIKxVET8

No chef will ever tell you to use fresh green peas over frozen for a recipe like this.

Why do Americans seethe so hard over this guy?

Guess who often doesn't vacuum seal their food?
Spoiler alert: it's lazy restaurant owners who claim all their food is fresh.

pretty sure Americans like him more than anyone m8

Here's what you need to know about frozen food:
Some things are good, others have been corner cut and are bad as a result. This tends to be the cheap things people go for, resulting in the opinion "frozen food was shit".

Take ice cream. It's simple to make right? Cream, milk, sugar, flavorings, optional add ins. There are good ice creams in the freezer section. But right next to it is "frozen dessert". The just barely ice cream. The ice cream plus filler. The ice cream plus cellulose. All edible, but not all the same. What do people talk about? The frozen dessert ones of course! No one is writing articles and posts about Magnum ice cream. They are harping on Bryers fake ass ice cream.

Anyway, the same shit applies to the rest of the frozen section. Some shit is perfectly fine and good (and priced higher), while the same cheap crap is nothing but filler and weird knock off chemicals and soy. Again, people then focus on the shit versions, not the good versions. Frozen meatballs can be great - you just need to pay for them.

Also fun fact: the veggies you buy are blanched and water is added to them to add weight (and to help steam them if cook in bag). You are NOT buying frozen veggies. This fact also contributes to the "corpos fucking people over" image.

Plus NO ONE vacuum seals shit to avoid freezer burn. And freezer burn is the enemy of food preservation at cold temps. It's only recently the meat department figured that out and started vac packing shit thanks to food saver tech.

If restaurants are serving food that is worse then home cooking, why pay $40 to eat there when you can spend less for better quality by cooking at home?
>>
>>22260520
He probably expects them to disclose it too.
"And we have a frozen halibut tonight, with..."
He just needs things to nitpick and dramatically freak out over.
The UK version he was more calm and helpful.
