Just make your own pizzas with your own flour. It's fun and cheap. Here's one I made.

    >>62831144
    >>62831158
That's a really nice looking pizza. Can you give me any tips for the dough? Mine don't look that good. Maybe it's the oven? Thanks.
    >>
    >>62831169
Two important things I learned along the way (Neapolitan pizza) :
    - First, it's REALLY understated how important the oven is. Your usual kitchen oven going 250°C won't do the trick. If you want to start for cheap, look at those ovens like pic related (Ferrari G3, Ariete 909, and so on). I thought at first they were a meme, but to go to 400°C they do wonders for around 100 bucks. A bit less a few years ago, but inflation is a bitch. They got big in Italy a few years ago, due to how cheap they are, and gathered a big community because modders could make them go beyond their limits. Though keep in mind they have drawbacks, but the next big step is a real pizza oven with a real biscotto stone, and the next step in price is like 600 bucks for a Macte oven (that's what I went for), and even pricier for Effeuno. To think those ovens were in the 500 bucks range before 2020...
But really, the little reds like the G3 and Ariete 909 are good starters. They are a trap in the sense that at some point you will want MORE, but it's also safer to start from there and see if you like making your own pizzas without breaking the bank on a bad investment.

    - Second, it's the flour. If you're in the US, I don't know if you have easy access to Tipo 00 flour, but this is the one to go. My favorite one is the Caputo Cuoco one, it's so idiot-beginner-proof that it's ridiculous. Just use a 65% hydration protocol on 24h at room temperature with it, and you can't go wrong. No sticky shit on the fingers, nice dough balls in the end, it just werks.
When I don't have Caputo Cuoco at hands, I use other flours with various win/loss rate. Either way, Tipo 00 is just the classification, any flour with like 12.5g of proteins per 100g will do the job. I wouldn't go under 12g/100g, otherwise it won't have enough "force" & won't absorb water as much, and it will end up with sticky dough, not fun at all. You can, of course, lower the hydration level. You can try 60% hydration if low protein.
    >>
    >>62831240
I have one of these (pic rel) it's pretty nice, so fast
    >>
    >>62831240
Basically my protocol with my Caputo Cuoco, for 2 dough balls, is :
For 65% hydration, assuming room temperature at 21-22°C all day and night
    - 322g flour
    - 209g water
    - 8.4g salt
-0.07g yeast (yes you read that right, don't ever go too high on yeast)
    1) mix all that up, work ion it for 10-15min. You can machine it, but make sure to at least knead it by hand at least 2min after you machined it. It just werks better, and it won't stick much on the hands at that point.
    2) let it rest for 15min
    3) do a quick folding phase. At that point the dough shouldn't stick on the hands anymore, if it does, fold it some more
    4) let it rest 15min again
    5) redo a very quick folding phase, for this one, dough really shouldn't stick anymore. Make a nice ball
    6) let it rest for 16 hours
    7) After 16h, the yeast should have done its job
    8) cut it in half
    9) make two dough balls
    10) let it rest for 8h (less is also fine, usually I let it rest 6h, some only do 3h)
    11) time to make your pizza!

You can also go 63% hydration, in this case:
    - 326g flour
    - 205g water
    - 8.2g salt
    - 0.08g yeast
it doesn't look like much of a difference, but it really changes everything depending on your flour. 63% is more idiot proof, 60% even more.
And adjust yeast a little bit depending on your room temperature, or if you think your yeast is not potent enough (it decrease after a bit, until it doesn't work anymore and you open up a new bag. Fresh yeast is also a thing, but I prefer dry yeas for logistical reasons). Use pizza apps to adjust depending on the nb of dough balls you need, your room T°c, the duration (a 24h protocol is pretty fool proof. You can even extend it, but it becomes a bit cumbersome. Shortening it yields in less tasty dough because you'll use more yeast). If an app tells you over 9000g of yeast, ditch it.

    >>62831330
Yeah there are those wood ones and natgas ones, though they work best if you have a garden. Which unfortunately is not my case. Electric does the job anyway.

Buy some canned vegetables for cheap and just make vegetable soup. You literally only need mixed veggies, crushed tomatoes, and maybe some beef stock if you want it to taste better. It costs like 10 dollars to make an enormous stock pot of it that lasts a week.

This is ultra processed goy slop. Grow up and prepare your own food. It's easy, healthy and cheap. Doesn't need to take long either but you're too much of a goy to try.

Basically cheap bulk foods with some extra for vitamins and for making it palatable.

I get making fun of this guy for having a cart full of goyslop but most grocery store produce and meat is just as processed and fake. Unless you’re growing your own heirloom seeds in a glass greenhouse you’re fucked.

Unfortunately inflation leads to a direct reduction lifestyle. Cheap food is forever gone. There’s way too many fatties willing to spend 80% of their paycheck on food. Prices will remain high because there is no excess supply and no chance of ever gaining excess supply because fatties will pay any price for food and instantly consume it.

    Your options are
    1. Cope with the increased labor yourself (growing, prepping, cooking)
    2. Reduce your lifestyle in other places to spend more for food
    3. Starve yourself

Also keep in mind this trend will never reverse. Food is and will be expensive for the rest of time until revolution and rebuild. Until then, you will go into debt to eat real food or you will eat bugs.

I farm vertically inside my rented apartment. Energy is pretty cheap here in Romania.
My food scraps make for fertilizer, cardboard becomes nutrients for pricy mushrooms and it's pretty circular in my apt. Barely have grocery costs.

Skip the stock and use condensed bullion paste, otherwise you're just paying to ship a liter of water from god-knows-where, and it tastes better to boot. Easier to buy and store in bulk, too.
